Sunday Dinner

So the husband and I are trying to watch our points.  Yes boys and girls, the husband is counting points 🙂 So we decided to have the inlaws over for dinner instead of go out tonight. 

The Menu:

  • Wedge Salads with homemade blue cheese dressing, toasted pecans and blue cheese
  • Shrimp Scampi Pasta
  • Banana Cream Pie

First, the wedge salads.  We love love love a wedge salad.  I was first introduced to a wedge salad at Sullivan’s (a fancy restaurant in downtown Raleigh).  Now they are at Outback and everywhere else.  They are amazing.  Downfall: probably a million calories at the restaurants.  I mean, you know it’s full fat blue cheese dressing, with tons of blue cheese and other fattening goodness.  So I made it lighter.  My wedge salad has 3 points and is super yummy!

First rinse and cut your head of iceberg lettuce in quarters.

Then add homemade blue cheese dressing.  I got this recipe from the Weight Watchers cookbook.  It is only 1 point!!! :)  Oh yeah! 

What you will need:

1/2 cup reduced fat buttermilk

2 tablespoons light mayo

2 tablespoons crumbled blue cheese

1/4 teaspoon minced garlic

a pinch of cayenne (I didn’t use any and it made no difference!)

2 teaspoons minced fresh chives

In a blender pulse all ingredients until almost smooth.  Sprinkle in chives.  Cover and refrigerate for atleast a 1/2 before serving.  It makes 6 servings and you can store it up to 2 days.*

Then take a tablespoon of blue cheese and sprinkle it on each salad. (1 point)

Take some toasted pecans (1/8th of a cup) and sprinkle over salads. (1 point)

And there is your 3 point salad 🙂

Onto the shrimp scampi.  Add pasta and boil.  Do not use salt.  I never have.

Mix one bag of frozen, tail off shrimp.  I think it’s a one pound bag.  Anywho,  add a little butter to your pan (just a little) and then add shrimp.  Drizzle some olive oil and then add some wine.  On this meal, I don’t really measure a lot except the amount of pasta.  Each package of whole wheat pasta makes 8 servings.  Each serving is 2 ounces or one cup cooked pasta.  Stick to that!  Don’t add more.  One cup pasta doesn’t seem like a lot, but it really fills you up.  Must be all that fiber 😉


Drain pasta when finished boiling, and pour shrimp mixture in.  Mix well and serve with salt, pepper and parmesan cheese.  (4 points for pasta, 2 points for shrimp, I estimated about 6-7 points per serving).

Now, the banana cream pie.  Okay, okay this ain’t your grandma’s banana cream pie.  It’s from the WW cookbook too and it’s made with lowfat yogurt.  I didn’t tell my guests this and the husband and the father in law looked at each other and laughed when they took a bite.  It wasn’t what they were expecting, but oh well.  It’s only 3 points a slice!!


Here is what you need:

12 low fat honey graham crackers crumbs

1 tablespoon butter

1 teaspoon water

4 bananas sliced thin

2 tablespoons fresh lime juice

1 envelope unflavored gelatin

1/2 cup cold water

1/3 cup sugar

1 and 1/2 cups plain ff yogurt

1 teaspoon vanilla extract

Preheat oven t0 350 degrees.  Spread 9in pie pan with non stick cooking spray.  In a medium bowl, mix, crumbs, butter, and water together until combined.  Spread mixture with hands in the bottom of the pie pan and along the sides of the pan.  Bake in oven until firm, about 5 minutes.  Let cool.



Mix bananas and lime juice together.  Reserve one cup.  Spread remaining bananas on pie crust.



Pour gelatin packet over cold water and wait 2 minutes.  Then add sugar and heat over medium high heat stirring constantly until gelatin and sugar dissolve.  Remove from heat, then whisk with yogurt and vanilla.  Pour into pie pan.  Arrange reserved bananas on top of yogurt mixture.  Refrigerate covered with saran wrap for about 2-3 hours before serving.* Read above disclaimer about WW recipe.

We then made 6 point s’mores.  2 sheets low fat honey graham crackers, 2 marshmallows, 2 pieces of Dove dark chocolate.  The husband said that they look like Chef off of South Park.  I laughed so hard.

Froyo Fanatic

The hubby and I had to get some engagement pictures developed today so we decided to run some fun errands too.  I took engagement pictures in Wake Forest last Monday and I am super excited how they turned out.  I have gotten lots of comments from a lot of my family and friends so that makes me even more excited.

Today we went to Chick fil a for lunch.  I was starving because I only had a granola bar this morning.  I was busy sweeping and mopping today and didn’t have time to eat a bigger breakfast.  I had the chargrilled and fruit salad with berry balsamic vinaigrette.  Yum!


We went to Trader Joe’s (my fave grocery store) to get some snacks for our road trip to Hotlanta this week.  Did I mention how excited I am to gamble at Cherokee?  I love love love the casino! I only play on the penny and nickel machines, but it’s a rush 😉

And then we hit up The Skinny Dip Frozen Yogurt!  It just opened right by TJ’s.  They have the nutritional info and WW points listed on their website.  Ladies and Gentlemen, I was home! I had Strawberry, and York Peppermint Patty.  I could only eat 4 ounces so I ate half of this.  I gotta remember to weigh every little bit.  The husband didn’t mind finishing it off.  Next time, I’m hitting up that toppings bar!


So you grab a cup, fill it with froyo and toppings and then you pay based on weight.  It’s only 39 cents an ounce.  I am in love!! I am beyond stoked about that place.  Guilt free froyo.  mmmm! We will be back again and again!!

I got some yummy snacks for the trip.  Road trips make me nervous because we go out to eat a lot and I don’t know what the points value is for a lot of it.  Thank goodness for guidebooks, weeklies, and eating half of my food! Wish me luck! I am so nervous.  I love vacationing, but I am not the type of person to splurge on vacation.  I still keep myself on track.  I mean, why can’t you still eat what you want, but in smaller quantities?  I don’t ever “splurge” or “go off my diet.” I eat what I want in moderation. On WW you are not on a diet.  It’s a lifestyle.  When you get to goal, you are still on WW, not a diet.  That’s why I love this program-it’s not a quick fix.  It’s for life.  So if I want cake, I’m eating it.  That’s why it works for me. I just plan ahead.  Love it!!

WW Wednesday

Yesterday, I burned 792 calories in Zumba and then went back for Body Combat and burned around the same (I forgot to turn my calorie counter off and it was over 800 when I remembered!).  So I earned 8 activity points yesterday! woo! 

I love earning activity points because I will eat them before I go into any weekly flex points.  I haven’t wanted them though, so that’s good. I’m now more satisfied than calorie counting.  I feel full and happy and that headache is not there anymore.  Go me 🙂

Virgin Sprouts

I need more sprouts in my life.  I want to get even more servings of fruits and veggies in my life and today I decided to experiment with brussel sprouts. I’ve heard of many people roasting them, but had yet to try them myself. 

I bought this microwaveable bag at Trader Joe’s.  That’s pretty cool that you can microwave them in the bag for a quick side dish, but I had roasting on the brain.

I preheated the oven to 425 degrees and started to trim the bases off of the sprouts.

And then cut them in half.

I put them on a pan with non stick spray and lots of salt and pepper!

I roasted them for about 20 minutes, tossing once halfway through.

WW Day 2

So back when I was on Weight Watchers, it was hard at first, but then got easier.  It turns on I haven’t steered too far of the WW path.  I am finding it pretty easy and I get to eat more than I did calorie counting.  It may work for some people, but frankly, it just made me cranky.  So do what works right?

I love Weight Watchers because you can easily turn it into a lifestyle.  No, not a diet.  I don’t consider myself on a diet.  We learned in WW that the first 3 letters in diet are D-I-E.  Do you seriously want to lose weight the wrong way?  I have to eat.  I don’t live to eat, I eat to live.  If I don’t eat I am down right grumpy. So I am happier on WW because I can eat!! You just have to find meals and snack low in points.  It’s all about the fiber.  If you screw up your whole day by eating like crazy (every female has 2 weeks out of the month where they want to eat eat eat and I swear 2 days that I want to eat the entire pantry!) it doesn’t affect you that much.  You just start fresh the next day.  I love that.  It’s not like “I eat a brownie and my whole diet is shot and I should just give up.” “Or I am going to eat whatever I want and start over Monday.” Stop waiting for Monday. Do it now.  Get out of that mentality of you ate some cookies and now you are going to gain all of your weight back.  Nope, sorry, not gonna happen!

You can have cookies, brownies, pizza, whatever you want IN MODERATION!! Counting points is so easy for me.  I have already gone through the refrigerator and marked every package with the points value per serving.  That way, when you are going to eat the whole house, you can know what the points value of a serving is, and not even have to think about it.  Ok, ok, off my WW soap box. I’m just saying, if nothing else is working for you, you should try it.  I already feel better!

Today I have a mini babybel light before the gym.  I love those 🙂 And then I burned 775 calories in spinning class (RPM).  I worked my booty off today for an hour.  That’s 3 activity points.  So, if I want to eat 3 more points today, I can.  🙂

I came back home, showered, and looked through my new cookbook!

This morning I made egg mug florentine.  Eggs and spinach mmm.  I put a little Frank’s on it, because eggs are just better with hot sauce!

And then I am going to read Wicked.  The husband is off fishing, so hopefully I can read a lot!
