Sunday Dinner

So the husband and I are trying to watch our points.  Yes boys and girls, the husband is counting points 🙂 So we decided to have the inlaws over for dinner instead of go out tonight. 

The Menu:

  • Wedge Salads with homemade blue cheese dressing, toasted pecans and blue cheese
  • Shrimp Scampi Pasta
  • Banana Cream Pie

First, the wedge salads.  We love love love a wedge salad.  I was first introduced to a wedge salad at Sullivan’s (a fancy restaurant in downtown Raleigh).  Now they are at Outback and everywhere else.  They are amazing.  Downfall: probably a million calories at the restaurants.  I mean, you know it’s full fat blue cheese dressing, with tons of blue cheese and other fattening goodness.  So I made it lighter.  My wedge salad has 3 points and is super yummy!

First rinse and cut your head of iceberg lettuce in quarters.

Then add homemade blue cheese dressing.  I got this recipe from the Weight Watchers cookbook.  It is only 1 point!!! :)  Oh yeah! 

What you will need:

1/2 cup reduced fat buttermilk

2 tablespoons light mayo

2 tablespoons crumbled blue cheese

1/4 teaspoon minced garlic

a pinch of cayenne (I didn’t use any and it made no difference!)

2 teaspoons minced fresh chives

In a blender pulse all ingredients until almost smooth.  Sprinkle in chives.  Cover and refrigerate for atleast a 1/2 before serving.  It makes 6 servings and you can store it up to 2 days.*

Then take a tablespoon of blue cheese and sprinkle it on each salad. (1 point)

Take some toasted pecans (1/8th of a cup) and sprinkle over salads. (1 point)

And there is your 3 point salad 🙂

Onto the shrimp scampi.  Add pasta and boil.  Do not use salt.  I never have.

Mix one bag of frozen, tail off shrimp.  I think it’s a one pound bag.  Anywho,  add a little butter to your pan (just a little) and then add shrimp.  Drizzle some olive oil and then add some wine.  On this meal, I don’t really measure a lot except the amount of pasta.  Each package of whole wheat pasta makes 8 servings.  Each serving is 2 ounces or one cup cooked pasta.  Stick to that!  Don’t add more.  One cup pasta doesn’t seem like a lot, but it really fills you up.  Must be all that fiber 😉

Drain pasta when finished boiling, and pour shrimp mixture in.  Mix well and serve with salt, pepper and parmesan cheese.  (4 points for pasta, 2 points for shrimp, I estimated about 6-7 points per serving).

Now, the banana cream pie.  Okay, okay this ain’t your grandma’s banana cream pie.  It’s from the WW cookbook too and it’s made with lowfat yogurt.  I didn’t tell my guests this and the husband and the father in law looked at each other and laughed when they took a bite.  It wasn’t what they were expecting, but oh well.  It’s only 3 points a slice!!

Here is what you need:

12 low fat honey graham crackers crumbs

1 tablespoon butter

1 teaspoon water

4 bananas sliced thin

2 tablespoons fresh lime juice

1 envelope unflavored gelatin

1/2 cup cold water

1/3 cup sugar

1 and 1/2 cups plain ff yogurt

1 teaspoon vanilla extract

Preheat oven t0 350 degrees.  Spread 9in pie pan with non stick cooking spray.  In a medium bowl, mix, crumbs, butter, and water together until combined.  Spread mixture with hands in the bottom of the pie pan and along the sides of the pan.  Bake in oven until firm, about 5 minutes.  Let cool.

Mix bananas and lime juice together.  Reserve one cup.  Spread remaining bananas on pie crust.

Pour gelatin packet over cold water and wait 2 minutes.  Then add sugar and heat over medium high heat stirring constantly until gelatin and sugar dissolve.  Remove from heat, then whisk with yogurt and vanilla.  Pour into pie pan.  Arrange reserved bananas on top of yogurt mixture.  Refrigerate covered with saran wrap for about 2-3 hours before serving.* Read above disclaimer about WW recipe.

We then made 6 point s’mores.  2 sheets low fat honey graham crackers, 2 marshmallows, 2 pieces of Dove dark chocolate.  The husband said that they look like Chef off of South Park.  I laughed so hard.

Ants on a log

This morning I woke up around 8 for Zumba.  I had a hard boiled egg white before class.  I burned 735 calories today shaking my booty!! woo!! I love my new calorie counter. 878 yesterday in RPM, 735 today and I’m going back tonight to try Body Combat with my cousin. 

I am a workout machine! PS my legs are starting to shape up!  I could really tell in the mirror today while dancing. 🙂

After my workout, I ate a 100 calorie Arnold Sandwich Thin with Crofter’s Superfruit.

Measure out a tablespoon of pb then lick the spoon 🙂

Add raisins and voila! It’s a better crunch than chips and you get a bigger portion size!

Gym Rat

Ok, I’ve been to 3 RPM’s and 1 Body Pump.  That is 4 days in a row!!!!! Crazy for me.  But I am feeling good.  I’m telling you, that RPM is addicting. 

After posting yesterday, I split a 100 calorie Jolly Time + Frank’s Red Hot with the husband.

For dessert we had chocolate tortillas.  I learned this recipe when I was in Weight Watchers a few years ago.  Take 2 tortillas (I used Trader Joe’s Reduced Carb tortillas) and one tbsp of semi-sweet chocolate chips.  Heat on a griddle or frying pan until chocolate starts to melt and sprinkle chips with cinnamon sugar.

Beer and Brownies

Last night was a relaxing night being snowed in.  We made some No Pudge Fudge brownies with half of a marshmallow in them.  I put them in a muffin pan to keep them portion control friendly.

Baked at 350 for about 20-25 minutes (just keep checking on them).

And we had a bottle of Trader Jose Light beer with a lime each.  Tasted just like Corona!

You know how you get the lime in the bottle? Stick your thumb in it and turn it upside down right?  Well, we found out quickly that my thumb was way too small to plug the bottle so the husband had to do it for me!

This morning I woke up and made some chocolate chip pancakes with some recipe I found on Allrecipes.  Be careful,  I think this website gave my computer a virus and we had to run a long virus scan on it this morning.  I had a bunch of trojans! ugh!

Chipotle Chicken Tacos

Slow Cooker Red Beans & Rice

I’m glad I bought the spicy jalapeno sausage from TJs otherwise this recipe would have been just meh. It was ok, but not my favorite.  It smelled awesome while cooking, but I was disappointed.

We snacked on this: Frank’s Red Hot and 100 calorie Jolly Time Popcorn while we waited on the Crock Pot.

So there is last week’s recap.  I’m going to count the recipes in the book to see how many there are.  I am determined to make every one this year!  Since we are snowed in today, I am going to read more of “The Time Traveler’s Wife",” since I finally finished to “Twilight” series!  Those books were good, but the chapters were never ending!  I might play in the snow today too 😉

Easy like a Sunday morning…

I enjoy Sunday mornings. Really, I do.  It’s Sunday nights that I hate.  The thought of going to work after a relaxing weekend, the weekly routines, the coming home exhausted and then making dinner…bleh!  But, a Sunday morning is wonderful. 

This morning the husband and I slept in!  It was so nice.  We went to our friend James’ birthday party last night.  Just a small get together.  It was funny.  A lot of his friends are so hilarious.  My cheeks hurt from laughing by the end of the night!

Here are the Thursday and Friday night meals I needed to catch up on!

Thursday night was Creamy Mac n Cheese with a Seven Layer Salad.

It looked so good and we were so hungry.  Wrong!  It was AWFUL! By far the worst meal I’ve made from this cookbook.  OMIT THE DIJON MUSTARD!

I would recommend this meal, if it did not include dijon mustard!  I was skeptical myself, but I put the two teaspoons in like it asked. It was terrible.  I was so sad about it.  The husband tried to appease my feelings by eating more than one bite, but was pretty relieved when I threw in the towel on this meal.  We just ended up eating the Seven Layer Salad instead.

Here is the recipe for if some reason you like a lot of dijon mustard taste:

Creamy Stove-Top Macaroni and Cheese

If I ever want to make this again (still having bad thoughts) I will definitely  nix the crazy ingredients and just make the mac n cheese. But hey, you may like it!

Friday night the in laws came over and I made:

Jambalaya with Shrimp and Andouille Sausage

along with fancy french cut green beans with a mixture of mayo, mustard, lemon juice, celery salt… you’ll have to look it up in the cookbook beside the recipe!

It was a little spicy, but so good.  I love love love Frank’s Red Hot Sauce.  If your recipe calls for hot sauce, you must use this!

And then we made homemade icecream.  A simple recipe that our friends James and Shelby gave us:

one can sweetened condensed milk

one half gallon chocolate milk (I used reduced fat)

one tub of Cool Whip

It tastes just like a frosty from Wendy’s!  Soooo good.

Then last night we ate some pizza and went to our friends party.  Overall, it’s been a good weekend.  The husband and I are just lounging around and then going somewhere to eat.

These tasted like Honey Grahams. Oh. My. Word.  I see myself using these for dips in the near future! And of course, a little glass of chocolate milk!  I’m going to read some more.  I am finally on the forth book of the Twilight Series (man, those chapters are long) and then get ready for dinner! 🙂

Weekend recap

Happy Monday guys!  Here is a recap of the crazy weekend I had!

Friday I woke up and was ready to go shopping!

I ate this on the way to Cary to go to grocery shopping.  I bought these at Aldi.  Pretty good, but not very filling.

Then I was stuck behind a garbage truck for what seemed like forever.  There was so much traffic on the other side I couldn’t pass.

This store just puts me in awe.  I am amazed by all of the cool and healthy food items they have.  My wallet hurts every time I go in here because I want to buy it all!

I bought some chocolate milk (it was supposed to be soy, but I wasn’t paying attention!), some Oikos yogurt and a few other items. 

I then went here: The mothership!

I can buy a weeks worth of groceries for around $100 that are fresh, gourmet and inexpensive. I love love love this store.  I could spent hours in here.  I’m so glad they built one here. It is so worth the drive.

Brandon and I are spending a little more in groceries, but think of all the money we could be spending eating out.  It makes a huge difference.

I think it was Jenna who said she feels rich when she has groceries and books.  I feel exactly the same way.  TJ’s and Barnes and Noble make my life complete.

We rented “Twilight” Friday night and then Saturday we went to see this:

New Moon!  It was good, some animated scenes were a little silly, but I enjoyed it.

Then the hospital craziness happened yesterday.

I went to Harris Teeter today.  These bottles of water were only 3 (24 packs) for $10!  That’s awesome.

We aren’t big breakfast people, so maybe this will help.  These are little packets that you mix with milk. They are worth a try.  I am not into a lot of “packaged” stuff. Like oatmeal packets, for example, I’d rather have fresh quick oats that packaged “peaches n cream” packets.  The oats in the tub are much better for you! So these will be used sparingly, but it will be nice to get some vitamins in me in breakfast form. 

I made some Crystal Light lemonade for the husband.  I read online that it helps with kidney stones.

Today I snacked on the BBQ.  Delish!  I love how light they taste and it was only 100 calories for the whole bag of 15 chips!  I love chips, but I hate splitting up the portions.  I love that I could eat the whole bag and not have to worry stopping!  The husband tried the sour cream and onion for lunch one day.  He said “Yeah they were good.” Yeah, his reviews wouldn’t go far on a blog 😉
